A datacenter proxy is an intermediary between a client (the device you use to access the internet) and a server. This proxy server will assign your device an IP address that is not affiliated with an internet service provider. Instead, they are issued by third-party cloud service providers. Datacenter proxies allow you to use the internet anonymously and make it very difficult for anyone to trace your internet activity back to you.
